So following the advice of mighty Gario here, I've been cleaning up and adding variety to my work, trying to make it less muddy and boring. I think i'm getting the hang of it but i'm not happy yet with the ending, it sounds strange at times (not sure if it's the melody or the mixing tho) and its still quite muddy.

There are many ocremixes with great dynamics. Several examples...

That covers many different genres of varying dynamics. As long as your track reaches normal volumes, it's probably acceptable.
Well you did say "something usable to learn with" which I saw as the same thing - the advice takes many forms.
and I disagree about Symphobia (I wasn't referring to it specifically, though) only being capable of the style that I think you're referring to. Though it's true that it's primarily aimed at that kind of music.
I've noticed all the tracks submitted to Ocremix have pretty ridiculously loud mastering. Sometimes it really works for the piece, sometimes it doesn't.
Is it possible for me to submit more dynamic work? Talking around -16 RMS-ish.
