Tough question. The OST from Pitfall: The Mayan Adventure (Master System/Windows 95 incarnation) is definitely my favorite OST of all time. Single tracks though? Idk. I also really, REALLY love Kazuya/Devil's theme from Tekken 2 (all 3 different arrangements; arcade, and then the separate themes in the PSX version).

Mega Man 8 also has mega nostalgia value for me, as does Mega Man X. Armored Core has really great music too, especially the 3rd generation games... Idk, there's just way too much great music out there to pick any single track for me :D
