I forgot to respond to your question about recording guitar sound. Most acoustic guitars these days are equipped with small amplifiers that you can hook up to your recording source. In this way, no additional noise gets recorded when sampling.

As for the recording, I use sound forge to record just about every single note that I play. Great tool to iron out recorded samples. Hope that answers your question.
