I don't have the skill to do them justice so I thought I'd ask you fine gentlemen/ladies. The songs I personally would enjoy hearing remixed, or at least think parts of them are worth using the most are: Chapter 2-2, Chapter 7 Boss, Intermission, Ending Theme, and Staff Roll.
