I literally saw this minutes after finishing Jabu-Jabu's Belly, so I went and checked it out. Indeed, the poor guard still dies a lonely death in the back alley. The lines were the same as the video you posted.

So, I'm pretty sure Bongo Bongo's hands used to stop being targets once they were stunned in the original. Not anymore. It's ridiculous how much harder the battle is with such a simple change. I actually lose health.
